Their fresh pasta began to be well appreciated from various clients, restaurants, cruise lines etc... but their original dream became true when in 2009 they opened the first Spaghetto Restaurant in South Beach, a small kitchen place where anybody could taste the daily produced artisan fresh pasta cooked at perfection following the best Italian traditions and served in a friendly environment at the right price!

With the time the menu got wider and today Spaghetto restaurants offer also other traditional Italian dishes always with the goal to follow the rich Italian culinary traditions.

OUR FRESH PASTA METHOD
-Here at Spaghetto Factory, We specialize in manufacturing high-quality Italian pasta, ravioli, gnocchi, and tortellini. Using traditional Italian recipes, We create 100% natural, no preservatives added, fresh pasta specialties. All of our pasta is non-pasteurized, the key to its fresh, homemade taste and texture. Additionally, our products are made under FDA and USDA regulation and inspection.

PASTA MIXER
This machine takes all the ingredients and mixes the perfect pasta, pushing it out in large sheets to be used for printing.

PASTA PRINTER
Our state-of-the-art Italpasta Machine can print over 400lb/s of fresh pasta each hour. Fresh pasta comes off the production line and is flash-frozen for preservation. The pasta shown on the right has spent over a month in the freezer. It has been defrosted and it is just as fresh as it was the second it was first made!

FREEZING
Our first mission is to produce a quality product. The best way to do that is by making a non-pasteurized product; so there is no loss in taste and texture. The pasta is then frozen quickly using a freezer tunnel, sealing it in this fresh state for later use. As our frozen pasta thaws, it reverts back to the fresh state as it was first produced. A technological breakthrough in pasta making, our Blaster Freezer literally flash freezes the pasta as it rolls off the line and Retains freshness without sacrificing storage longevity.

Production Line
-Mixing the pasta
The first step, all the ingredients are mixed together in the pasta mixer prior to printing.
-Sheeting the Pasta
Under pressure, the pasta is pushed out of the mixing machine in sheets and fed into the printing machine.
-Printing the Pasta
The sheets are cut, shaped, and/or injected with the correct filling.
-Drying the Pasta
The pasta is passed through to the dryer, where excess moisture is quickly removed.
-Freezing the Pasta
The pasta is then passed through our Blaster Freezer, where it is Flash Frozen in less than 20 minutes.

We are one big family all genuinely mad about fresh pasta and the pure satisfaction it brings to the taste buds. We strongly believe there's much more to pasta than flour and water. Our pasta comes from the factory floor, made fresh every morning by the skilled hands of our very own artisan pasta makers. Our style of pasta originates from the regions of southern Italy, where food and agriculture are truly embedded in people's sense of identity and belonging.

FRESH PASTA
We produce our pasta on a daily basis following classic recipes and using fresh products with non-long-life ingredients to guarantee you the true taste of the Italian tradition.

FROZEN PASTA
From the same daily production we allocate a part of it for controlled freezing, to always ensure the quality that distinguishes our pasta, even and above all in your homes.

OUR PRODUCTION
We pay a lot of attention to the smallest details - something you might not expect for food as simple as pasta.
Here's why: the quality and the care lavished on every ingredient at every step, turn what might have been an ordinary dish into an extraordinary eating experience.

BEST INGREDIENTS
Our Factory utilizes the age-old technique of pasta extrusion, which originated in the South of Italy. 'To extrude' is defined as 'to push out' or 'to shape', and through this method of creating fresh pasta, the dough is pushed through bronze dies which hold the shapes of common pasta. Once pushed through, the pasta dough comes out looking like the pasta we know and love.

ARTISAN PROCESS
The method of extruding pasta with bronze dies does not just result in fresh pasta which uses the revered Italian tradition, but also in pasta with a very distinct texture. Because of the high pressure and the ensuing tension from extruding, what comes out is pasta with a coarse texture. This is a defining quality of artisan pasta extruded from bronze dies, and is also the feature that we think makes it special.

TRUE ITALIAN EXPERIENCE
One more thing that makes our fresh pasta unique is its flavors. We use only the best Italian flour in our production. The flavors we add to our pasta are sure to enhance their natural tastes, as well as complement sauces really well, leading to a brand new gastronomic experience
